One of the most auspicious days in the Hindu calendar, Akshaya Tritiya falls on the third lunar day of the waxing moon phase, or Shukla Paksha, in the month of Vaishakha/Chaitra. The word ‘Akshaya’ means ‘that which can never diminish,’ while Tritiya refers to the 3rd lunar day. The significance behind this name is that Hindus believe that anything bought or undertaken on this day will see growth, multiplication, or success. Hence, people find it an ideal day to begin new ventures, conduct weddings, Griha Pravesh and other auspicious events, make donations, investments, etc, and buy things like gold, silver, vehicles, property, houses, etc., so that their ventures will grow and become successful and their wealth and possessions increase incrementally. Many Vedic scriptures mention this day and its importance. People often observe a fast on this highly auspicious day. But there are certain foods one can eat, which are quite delicious too. Here are some mouthwatering recipes for fasting foods on Akshaya Tritiya. Fasting Foods for Akshaya Tritiya Pal Payasam Made using milk, rice, cardamom, and sugar, Pal Payasam is a South Indian delicacy served at festivals and special occasions. It is tasty and creamy. To make it, cook the rice in milk and add cardamom and sugar to it. Some also add saffron. You can have it hot or cold. Gujjiya It is a stuffed delicacy with an outer covering of maida and a stuffing of semolina, mawa, and sugar. There are many variations of this dish.

Gehu Ki Kheech This is the main dish. It is filling and healthy and resembles porridge. It is a traditional preparation for Akshaya Tritiya in north India, especially in the state of Rajasthan. To make it, wheat is first dry-milled after removing the husk. This is cracked wheat without the husk. You can get ready-to-cook kheech at Marwari shops. You can also use dalia or broken wheat to make it at home. Thalipeeth Thalipeeth is a spicy roti or bread of multigrain flour. It is tasty, very nutritious, and wholesome. To make this popular Marathi dish, you need rice, jowar, bajra, and gram flour. Curd or butter is often served with it. On Akshaya Tritiya, people have this dish for breakfast. Shrikhand This delicious sweet gives one a lot of energy. One uses curd, saffron, sugar, cardamom, and fruit puree to prepare it. Dal Palak Dal-Palak is a mildly spiced curry made with palak/spinach, which is rich in iron and dal (lentils). This dish provides protein, iron, and vitamins. It is a very healthy festive food symbolizing the festival’s themes of abundance and auspiciousness. Basundi This milk-based dessert is a staple of Maharashtra and Gujarat. To make it, boil milk until it thickens, and then add sugar, cardamom, and saffron (optional). Served cold, you can top it with chopped almonds or raisins. This dish is thick and creamy. Mixed Vegetable Curry Akshaya Tritiya represents abundance and prosperity. To symbolize this, a mixed vegetable curry symbolises this abundance as it includes several colorful vegetables like bell peppers, cucumber, pumpkin, okra, and cauliflower. These vegetables signify the bountiful harvest and and also make a filling and wholesome dish. Malpua This is a pancake made using refined flour, sugar, milk, and dry fruits. It is fried in oil and then dipped in sugar syrup. Lauki Halwa/Dudhi This dish uses bottle gourd and it is a delicious Indian dessert. It is delicious and easy to make. It also has a good amount of nutrients. Puranpoli Puranpoli is famous in Maharashtra and is prepared on special occasions. People make a stuffing of gram dal, jaggery, and sugar and stuff it in flour, which is then cooked like roti. Adding fennel seeds and cardamom powder enhances its flavour. As it is fried in ghee, it is very tasty. Sabudana Khichdi Sabudana khichdi is made using soaked tapioca pearls (sabudana), cooked with diced potatoes, roasted peanuts, etc. It is seasoned with cumin seeds, green chillies, and curry leaves. This flavorful dish is light and very populary during fasting periods or festivals. It's nutritious, and provides energy as sabudana and potatoes are rich in carbohydrates and peanuts and ghee provide protein and fat. Modak People make this dish on Ganesh Chaturthi as well as Akshaya Tritiya. They resemble momos, and to make them, people use a dough of rice flour, which is then stuffed with a mixture of coconut, jaggery, and dry fruits. Chakli This is a savory dish made using spices and gram flour. You can make it in advance and store it for many days.
